The way to my heart is through my belly.
After having my Mom here for the last five weeks, our house has been clean, our fridge has been stocked, and our bellies have been full. I knew when she left us on Sunday that we would be in trouble unless she made us some of her delicious food to go. Thankfully, my Mom hooked us up with a freezer full of prepared meals to get us through the next two weeks.
Here are five freezer meals that we, and all new Moms and Dads, will absolutely love.
1. Turkey Meatloaf
I usually make turkey meatloaf every other week for my family, but since it can be a pain in the butt to put together, my Mom prepped a few for us. Here is my recipe for mini turkey meatloaf muffins. Mix all the ingredients together, form into a loaf, wrap in saran wrap and tinfoil, but do not bake! Whenever you decide you want to cook it, remove the wrapping and place in a loaf pan. Cook it in the oven for an hour and a half at 350 degrees Fahrenheit.
2. Teriyaki Chicken
3. Chicken Soup
The best part about making chicken soup is that you can freeze the leftovers. My mom made a huge batch, but didn’t include any noodles. We will cook up a pot to put in the soup when it is time to eat it. Here is an easy recipe for 30-minute homemade chicken noodle soup you can follow – just leave out the noodles! Wait until the soup is cool to double bag it or store it in glass containers.
4. BBQ Pork
For this easy BBQ Pulled Pork recipe, we left out the root beer, onion, and liquid smoke. We also added an extra bottle of BBQ sauce at the end because we like wet BBQ. Note: the hardest part about making this is pulling apart the meat when its all done! Serve with hamburger buns or rolls and a salad.
5. Meatballs
One of Annabelle’s favorite meals is spaghetti and meatballs. Since my Mom makes the BEST meatballs, we had her cook up a couple of batches to freeze for our little girl. Check out my recipe for meatballs, but also this easy Make Ahead Freezer Meatballs recipe to see how to store and serve the finished product.
Here are some more easy freezer meal recipes you can prepare before your little one arrives! Or – if you are a busy family and have a Sunday to meal prep – cook up any of these dishes for the week ahead.
