Pasta with Peas, Bacon, and Dairy Free Pesto

Looking for a new weeknight meal? This simple recipe for Pasta with Peas, Bacon, and Dairy Free Pesto is delicious and can be enjoyed hot or cold! I’m thinking this may be one of my new favorite easy peas-y comfort foods.

A few weeks ago I was feeling a little down in the dumps and wanted something to scrumptious to eat. Pasta is one of my favorite comfort foods, but summer heat makes me want to eat light instead of hearty meals. Thankfully we’ve had mild weather – which makes for the perfect conditions for enjoying a comforting meal. Pasta with peas, bacon, and pesto is scrumptious and decadent!

There are a few important steps when making pasta with peas and bacon. First, one must always use frozen peas – canned peas will always be mushy! Second, make sure to cook the bacon until it’s crisp. Third, immediately place the bacon on a paper towel to soak up the grease!

*Note: You can dice the bacon while it is raw and cook in a skillet if preferred – OR use pancetta!*

Pasta with Peas, Bacon, and Dairy Free Pesto

An easy peas-y dairy free comfort food with bacon, peas, and store bought vegan pesto.

Ingredients

  • 6 slices bacon cooked, drained, crumbled
  • 1 cup frozen peas
  • 1 box fusilli pasta
  • 1 container vegan pesto *you can use regular if you're not dairy free

Instructions

  • 1. Cook pasta according to the directions on the box. Add the peas when there are 2 minutes left. Reserve 1/2 cup of pasta water and drain the rest.
    1 box fusilli pasta, 1 cup frozen peas
  • 2. Toss the pasta, peas, and vegan pesto in a large bowl. Stir in pasta water. Top with crumbled bacon.
    1 container vegan pesto, 6 slices bacon
