Ingredients
1 2/3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup sugar
2 eggs
1/2 cup vegetable oil OR 1/2 cup applesauce
2 cups bananas, mashed
1 1/2 teaspoon vanilla extract
1/2 cup chocolate chips
2 loaf pans
Directions
1. Set oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.
2. Sift together the flour, baking soda, cinnamon and salt. Beat sugar and eggs with a whisk until light and bubbly.
3. Drizzle in oil. Whisk until mixed thoroughly.
4. Add mashed bananas and vanilla. Whisk until thick. Fold in dry ingredients and chocolate chips.
5. Pour the batter evenly between two greased loaf pans.

6. Bake for about 45 minutes to 1 hour. (Insert a toothpick into the center of the loaf to make sure it is cooked all the way through the middle before removing).
